We established Holcombe Distilling in 2015 with the aim to create a family-owned independent distillery that creates high quality gins, and pushes the gin flavour boundaries. We bought a farm in the small Victorian town of Barfold, located 15 minutes outside of Kyneton. It’s beautiful grazing country with rolling hills, large mobs of kangaroos, and plenty of cockatoos and kookaburras patrolling the sky. The region is home to some of Victoria’s best food and wine, and we are proud to be part of a community that is passionate about the things they create. Our gin, and all of our production, is hand-batch distilled and non-chill filtered - because we believe that taste is everything!

Creating the best gin possible is as much art as it is science. Aroma and taste is everything. Creating a beautifully balanced flavour experience is what drives and guides our gin making process.
Nothing is rushed, our Barfold Dry Gin took three years to develop and perfect. Nor do we sit still, we are continually searching for new and exquisite flavours to make your gin drinking experience both memorable, pleasurable and completely unique. We hope that you thoroughly enjoy our gin.
